During Karva Chauth, along with fasting, worship, and dressing up, the preparation of Sargi must also be done in advance. The fasting plate prominently features fruits, dry fruits, and nutritious dishes. Here are some recipes for the Sargi thali –

Sweet Vermicelli (Meethi Seviyan)

Ingredients – 1 cup vermicelli, 2 tablespoons ghee, 8-10 cashews, 8-10 almonds, 4 cardamom pods, 1/2 cup sugar.

Method – Break the vermicelli into pieces. Chop the cashews, almonds, and coconut. Heat ghee in a pan and roast the vermicelli until lightly browned. Roast the cashews and almonds until fragrant.

To make the syrup, boil one cup of water with sugar and cardamom. When the sugar dissolves, add the roasted vermicelli and cook while stirring continuously. Let it cook on medium heat for five minutes, then add cashews and almonds, turn off the gas, and keep the vermicelli covered for 5 to 10 minutes.

Ingredients – 1 bowl wheat flour, 1/2 bowl sesame seeds (roasted), 1 cup jaggery (crushed), dry fruit pieces, coconut powder, 50 grams desi ghee.
